Wild Rice with Grilled Chicken Breast

2018 brings about change, I don't like who I was in 2017 so the plan is to lose weight. I have even began to document my journey, The Inconvenience of Losing Weight. Even though we run a lot, we need to eat right as well. Thankfully the  team at Bachelors Kitchen Mzansi will be sharing their food recipes. Try them and let us know what you think... 


Ingredients 

- 2 chicken breasts(skinless and boneless)

- 1 Cup of Wild rice(cooked as per packet instruction)

- 250g of Spinach(chopped and steamed for 20 minutes)

- 250g of mushroom(chopped)

- Cup of mix peppers (Red, Green)

- Half chopped onion

- Half a cup of corn (frozen)

- Lemon zest spice or chicken spice will do fine

- Salt and pepper

- 2 tbsp of light soy sauce

- Butter – the healthier the better (for frying rice and grilling the chicken)

To prepare the chicken... 

- Preheat a grill pan and set it on medium-high heat

- Rub the chicken with your choice of spices with a pinch of salt and pepper

- Add 3 tablespoons of butter and lower the heat to medium

- Add the chicken breast

- Cook for 10 - 15 minutes on each side

- Cover the chicken with foil or lid the pan and set it aside

To Prepare the rice...

- Heat 2 tablespoons of butter in a pan

- Add the onion and peppers

- Add 1 tablespoon of chicken spice

- Add mushrooms, cooked spinach and corn, stir-fry for 2 minutes.

- Add rice, tossing to mix it well, stir-fry for 3 minutes.

- Add 2 tablespoons of light soy sauce

- Add salt and pepper
